Everyone is a pronoun, and every one is a noun phrase.
Everyone means “all people”—or at least all of the people who are relevant to the discussion:
Please tell everyone that the meeting will begin late.
Everyone cannot be used for non-people, not even animals, unless you regard animals as people (which is nice, but not normal usage in English).
Every one means “every” of some thing:
Did you read the assignments? Every one?
Please send me every one of the photos.
One does not usually use every one for people, because in that case, you can use everyone. But this is not a rule. You may use every one for people, in some cases, such as before an of- phrase:
We must make sure that every one of the eligible voters can vote today.
